I have been watching this guy forever and have never made cheese myself but it's definitely on my to-do list. Not sure I would start with Gouda though. Probably some mozzarella, it seems easier for a beginner. I love niche channels like this with very knowledgeable people who will give clear instructions and not just a 5 min click bait title with no measurements or notes on best practice or tips and tricks.
